Pita bread is over 4,000 years old and is believed to have originated in the Middle East, specifically in ancient Egypt and Mesopotamia .
It was a bread of survival and community: easy to bake in clay ovens, quick to cook, and long-lasting. Its famous “inner pocket” forms when heat separates the dough into two layers, creating the perfect space to fill with meats, vegetables, or sauces .
Today it’s a staple of the Mediterranean diet and a symbol of unity and tradition. Each culture has its own name for it: pita in Greece, khubz in Arabic, baladi in Egypt, and lafah in Israel.

- 500 g wheat flour (can be half whole wheat, half white)
- 300 ml warm water
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 7 g dry yeast (1 packet)
