Preparation:
Finely chop the parsley, garlic, onion, and red bell pepper if using.
In a bowl, mix all the chopped ingredients, add the oregano, chili pepper, ground pepper, and salt.
Add the vinegar and mix well so the ingredients hydrate.
Add the oil slowly while stirring to emulsify the sauce. Adjust the salt, vinegar, and chili to taste.
Let it rest for at least 30 minutes to allow the flavors to meld.
Refrigerate for 1 hour before using.
